Château Calissanne Olive Oils
Stretching out at the foot of the hills of Lançon-de-Provence, with views to the seaside town of L’Estaque, the estate's 50 hectares of Aix-en-Provence AOC classified olive trees face the Montagne Sainte Victoire. The five south-facing groves are planted in limestone scree-rich soils in a warm, dry site for which this tree - the foremost symbol of Mediterranean civilisation - has a particular fondness. Two traditional Pays d’Aix varieties are cultivated at Calissanne: Aglandau and Salonenque, which takes its name from the nearby town of Salon-de-Provence. Once taken to the mill, the olives are crushed to extract the oil: five kilos of fruit yield
one litre of oil. Already produced in ancient Greek and Roman times, olive oil makes an excellent contribution to a balanced diet and is perfect for cooking. Together with cereals and wine, it forms the famous "Mediterranean trilogy".
